2 bananiet isslajsjati

3 imgħaref vermut, jew sherry, jew meraq tal-larinġ

2 bajdiet sħaħ jew 3 abjad tal-bajd imħabbta

100g ġewż imqatta’

Nofs kikkra (125ml) żejt veġetali tal-qamħirrun

Niskata kannella

Essenza tal-vanilla

METODU:

Xarrab il-frott imħallat fil-vermut u ħalli lejl jew tal-inqas għal siegħa f’bieqja kbira.

Idlek il-qiegħ u l-ġnub ta’ landa tal-kejkijet ta’ 20ċm jew loaf tin.

Saħħan il-forn minn qabel għal 350ºF / 180ºC – Gas Mark 4.

Żid it-tuffieħ, l-banana, il-ġewż imqatta’, l-essenza tal-vanilla u l-kannella mal-frott imxarrab u ħawwad sewwa.

Żid iż-żejt u l-bajd imħabbat. Ħawwad.

Daħħal id-dqiq b’imgħarfa tal-metall sakemm kollox jitħallat sewwa.

Ferra’ fil-landa u llixxa l-wiċċ.

Jekk trid tista tqiegħed xi ftit lewż mqaxxar fuq il-wiċċ.

Sajjar għal bejn 30 u 40 minuta jew sakemm isir dehbi. Ara li meta ddaħħal skewer fin-nofs, joħroġ nadif.

Ħallih jiksaħ fil-landa.

Poġġi fuq wire rack sakemm jiksaħ kompletament.

Easter Saffron Cake

Ftit ħjut taż-żafferan (saffron għall-ħelu)

Mgħarfa ilma sħun

175g zokkor fin (castor sugar) Lamb Brand

180ml żejt taż-żebbuġa

3 bajdiet imħabbtin

Qoxra ta’ lumija maħkuka

3 kuċċarini karwija (caraway seeds)

175g dqiq self-raising Lamb Brand

Biex iżżejjen:

Bejn 15 u 20 bajda taċ-ċikkulata

Krema friska jew yoghurt naturali

(Għall-forma tonda minn dawk tal-ħofra fin-nofs, ta’ 20ċm midluka ħafif biż-żejt.)

METODU:

Saħħan il-forn minn qabel għal 325ºF / 160ºC – Gas Mark 3.

Poġġi l-ħjut taż-żafferan f’kikkra u ferra l-ilma sħun. Ħallieh jogħqod.

Ħawwad iż-żejt u z-zokkor fin f’li kien għal madwar 5 minuti sakemm jitħalltu sew.

Żid iż-żafferan u bil-mod, żid il-bajd u ħabbat sewwa. Żid il-qoxra tal-lumija u l-caraway seeds. Din it-taħlita tista ssir fil-mixer tal-elettriku bil-ballon whisk.

Bil-mod, daħħal id-dqiq b’imgħarfa tal-metall. Ferra’ t-taħlita fil-forma li tkun ippreparajt u aħmi fil-forn sħun għal bejn 35 u 40 minuta, jew sakemm jinħass iebes. Aqleb il-cake fuq tray tal-wire biex jiksaħ.

Poġġi l-cake fuq il-platt li tkun se sservi fuqu. Imla l-ħofra tan-nofs bil-bajd żgħir taċ-ċikkulata u servi bil-krema friska jew yoghurt naturali.

Beef Stew with Barley and Dried Fruit

beef-stewServe this lovely beef stew with crusty fresh or toasted Maltese bread for a hearty family meal.

Ingredients:

· 80g bacon, diced

· 1 tablespoon olive oil

· 500g stew beef, lean, cut into small pieces

· 4 tablespoons flour

· Salt & Pepper to taste

· 230g sliced mushrooms

· 1 cup sliced celery

· 1 onion chopped

· 6 cups beef broth or stock

· 1 bay leaf

· 100g Lamb Brand Barley

· 150g Lamb Brand Mixed Dried Fruit

· 2 medium carrot sliced

· 1 large potato, cut in cubes

· 1 cup green peas, frozen, thawed

· 2 tablespoons flour blended with 2 tablespoons cold water (optional)

Cook bacon over medium-low heat in a large pot. Toss stew beef pieces with the flour, salt and pepper. Add to the bacon mixture. Add olive oil. Add celery, and onion. Cook over medium heat, stirring frequently, until beef is browned and onion is tender. Add beef broth and bay leaf. Cover and simmer over medium-low heat for 45 minutes. Add barley, carrots, and potato. Reduce heat to low. Cover and simmer for 25 minutes. Add mushrooms, peas and fruit, simmer for about 25 minutes longer, or until vegetables and meat are tender.

If desired, stir in the flour and water mixture. Cook and stir until thickened and bubbly.
Serves 6 to 8 persons.

Lamb Brand Winner

lamb-brand-swh-winnerNatureline Ltd announced that Lamb Brand customer, Susan Vella from Pembroke, is the winner of a Solar Water Heater from International Sales Direct. The prize was open to all Lamb Brand legumes, pulses and beans customers who bought the products and sent in their empty packets. All customers were also given a free Lamb Brand ecological shopping bag.

The Solar Water Heater was presented to Mrs Vella by Natureline Managing Director Joseph Galea and Mr Brandon Borg on behalf of International Sales Direct. Mr. Galea thanked Ms Vella for her custom and stated that this competition was part of Lamb Brand’s Healthy Lifestyle Campaign. He also pointed out that Lamb Brand is committed towards a better environment. Through this campaign empty plastic bags were collected for recycling. The prize itself is also part of Lamb Brand’s effort towards a cleaner environment.

Natureline has also announced that the Lamb Brand Traditional Easter Figolla Campaign was sold out in three days. The winners of that campaign will be announced shortly. Another campaign associated with Mother’s Day will be launched soon.

Lamb Brand’s Healthy Adzuki Tricolour Rice

This is one of the simplest savoury dishes with adzuki bean. A colourful mix of red (adzuki bean), green (pea), white (barley) and brown (brown rice); it has all the goodness of whole grain food and fibre. Imagine having it with your favourite stir fry or curry. It would be a good diet balance even if you are up for a slightly high fat meat dish.

Ingredients:adzuki-beans

  • 60g Lamb Brand Adzuki Beans
  • 100g Lamb Brand Barley
  • 20g Lamb Brand Green Split Peas
  • 2 cup of brown rice
  • 8 cups of water

Preparation:

1. Rinse both barley and brown rice, and soak for about 1 hour.

2. Soak adzuki beans over night and rinse.

3. Mix all ingredient and bring to a boil, then bring it down to low heat.

4. Simmer till water is almost absorbed, turn off the heat.

5. Fluff the rice immediately and cover it to simmer for another 20 to 30 minutes.

6. Fluff the rice again while it is still hot, before serving.

Note:

1. If you still prefer to use white rice, do not soak the rice prior to cooking. White rice has been processed so it needs no soaking.

2. For those who like a little flavour, you can add in some vegetable stock or chicken stock while cooking. But if you are to use fresh stock in liquid form, remember to make sure the total water amount is still the same. For example, if there is 1 cup of liquid stock, reduce 1 cup of water.

METODU:

Saħħan il-forn minn qabel għal 325ºF / 170ºC – Gas Mark 3

Iksi l-landa bil-grease-proof paper doppja fil-qiegħ u fil-ġnub.

Agħrbel id-dqiq plejn u d-dqiq tal-patata, il-baking powder u l-mixed spice flimkien. F’bieqja oħra, ħallat flimkien il-frott niexef, il-konfettura, iċ-ċirasa mqattgħa f’4 biċċiet flimkien ma’ 3 imgħaref mid-dqiq magħrbul. Ħawwad sewwa biex id-dqiq jiksi l-frott sewwa.

Fil-bieqja tal-mixer bil-K-beater, ħawwad flimkien il-butir u z-zokkor sakemm it-taħlita tiġi ċara, ħafifa u kremuża. Żid il-bajd, bil-mod, mat-taħlita tal-butir, kull darba tħabbat sewwa. Jekk it-taħlita tibda tisseparta, żid ftit dqiq. Żid il-qoxra tal-lumija. B’imgħarfa tal-metall, daqqal id-dqiq fit-taħlita. Żid it-taħlita tal-frott u l-cognac u ħawwad sewwa b’idejk.

Iftaħ biċċa marżipan (300g) u aqta’ ċirku ftit inqas minn 20ċm (8 pulzieri) dijametru. B’imgħarfa, itfa’ nofs it-taħlita tal-kejk f’landa tonda b’dijametru ta’ 20ċm li qabel tkun ksejt bil-grease-proof paper doppja u illixxa it-taħlita.

Poġġi saff marżipan fuq it-taħlita tal-kejk. Itfa’ l-kumplament tat-taħlita fuq is-saff tal-marżipan u llixxa. Fin-nofs, agħmel bħall ħofra żgħira b’imgħarfa.

Dawwar il-landa tal-kejk bi brown paper doppja u orbot b’biċċa spaga. Aħmi fil-form għal tlett siegħat.

Qabel ma ddaħħal il-kejk fil-forn, poġġieh fuq pjanċa li fuqha tkun għamilt brown paper doppja u dixx bl-ilma fuq l-ixkaffa t’isfel tal-forn.

Biex tara dan il-kejk sarx, ma’ tistax iddaħħal skewer għaliex il-marżipan għandu tendenza li jeħel u għalhekk taħsbu li t-taħlita tal-kejk għada ma’ saritx. Biex taraw il-kejk sarx, għandkom tmissu il-wiċċ tal-kejk b’subgħajkom u tħossu li huwa sod. Qatt m’għandkom tiftħu l-forn qabel ma jkunu għaddew sagħtejn u tlett kwarti. Tistgħu tgħattu il-wiċċ bi brown paper jew carta oljata jekk il-kejk jiġi ismar wisq.

Meta l-kejk ikun lest ħallieh fil-landa għal xi siegħa u wara oħorġu mil-landa u poġġieh fuq tray tal-wire biex jiksah għal kollox. Iftaħ 300g mil-kumplament tal-marżipan u dawwar il-kejk ta’ taħt fuq. Idlek il-wiċċ tal-kejk bil-ġamm tal-berquq li tkun għallejt fi ftit ilma u ħallejthu jiksaħ. Aqta’ marżiupan l-istess qies tal-kejk u iksi il-wiċċ tiegħu.

Agħmel ħdax il-ballun tal-marżipan u poġġihom mad-dawra ta’ fuq tal-kejk. Idlek bil-bajda mħabbta (extra) u poġġi taħt grill sħun biex kollox jieħu daqsxejn kulur. Żejjen in-nofs bil-bajd taċ-ċikkulata żgħir.

Sajjar il-basal, tadam u qargħa ħamra fi ftit żejt. Żid in-nofs dada u tektek. Malli kollox ikun kważi sar, niżżel minn fuq in-nar u żid ir-ross nej. Ħalli t-taħlita toqtor ġo passatur.

L-għada:

Għarbel id-dqid u l-melħ. Għamel l-għaġina billi tħaddem flimkien id-dqiq u l-marġerina. Żid iż-żejt u għaqqad bl-ilma kiesaħ. Fit-taħlita żid iż-żebbuġ, it-tonn taż-żejt, il-ħwawar u żbib. Iftaħ l-għaġina, iksi t-turtiera u poġġi t-taħlita tal-mili. Idlek il-wiċċ bil-bajda. Għatti bl-għaġina u ferrex ftit ġulġlien. Taqqab il-wiċċ bil-furketta.

Ħabbat ħafif l-abjad tal-bajd u bil-mod żid mat-taħlita biex tifforma “pasta”. Fuq pjanċa jew landa ċatta poġġi karti tal-ostji (rice paper) jew idlek il-pjanċa bil-butir u roxx ftit dqiq. Ifforma biċċiet mit-taħlita forma ta’ sigarri ħoxnin u poġġi fuq il-pjanċa jew landa mhux viċin xulxin.

Iċċatjalhom fuq, ħallihom daqsxejn ħoxnin.

Aħmi ġo forn li tkun diġa saħħant: 350ºF / 180ºC jew Gas Mark 4 għal 20 jew 25 minuta: mhux iżjed.

Sahhan iz-zejt fit-tagen, zid il-basla u sajjar sa kemm tkun ratba. Zid l-ikkapuljat u sajjar sa kemm jibdel il-kulur. Zid l-ghazz, l-istokk, l-inbid, il-hwawar u l-kunserva. Sajjar sa kemm jiftah jaghli u l-ghazz ikun irtab. Zid il-pizzelli u l-qamhirrun. Tektek ghal madwar 5 minuti.

Hallat il-cornflour ma l-ilma u zid mal borma fuq in-nar sa kemm jaghqqad kollox.portion-shepherds-pie

Poggi t-tahlita f’dixx tal-forn iksi bil-patata maxx u ahmi go forn moderat ghal madwar 30 minuta jew sa kemm tihmar il-patata.
